It is possible that all mentions of “rivers of gold” in literature actually refer to oxtail broth. It is golden. It flows. It is deeply satisfying. It will call people, carrying small gifts of wine and cheese, to your table. It will cure your winter cold.

It is, on top of it all, the bedrock of most culinary tradition. So there.
